Bacon Cracker Appetizers

This is PW’s Holiday Bacon Appetizer, which she recalls as a flashback to 1981.  Me?  I was maybe one year old, depending on what part of the year she’s referring, so I don’t remember these nor have I ever had them in the following 27 years.  Which is great, because this recipe was new to me!  My friend served these a few weeks ago when we were watching a UFC fight at her house.  The next day I made them to bring with us to another friends’ to watch the NFL playoffs.

I completely forgot I was going to make these until about 45 minutes before it was time to leave.  So, I baked at a higher temp (350) for 30 minutes.

The guys really liked these… I could go with or without them.  But, with the Super Bowl coming up, I think these will be a big hit at your party.  PW says they’re holiday appetizers, but..really?…with bacon, crackers and cheese it has Super Bowl written all over it!

Bacon Cracker Appetizers (Pioneer Woman Cooks, aka Holiday Bacon Appetizers)

Club Crackers
Thin-Sliced Bacon
Grated Parmesan Cheese

Lay crackers (as many as you want) face up on a cookie sheet.

Scoop about 1 tsp. of grated parmesan cheese onto each cracker.  Cut your package of bacon in half (or cut pieces individually) and, carefully so the cheese doesn’t fall off, wrap each cheese covered cracker in one half piece of bacond, completely covering the cracker. It should fit snugly around the cracker.

Place the bacon wrapped crackers on a baking sheet that has a rack on it.

Place in a 250˚ oven for about 2 hours.

  2. I made these and had the same feelings as you – they were okay but I could take or leave them. I made a few with brown sugar instead of parmesan cheese, though – yum! The sweet and salty combo totally did it for me.

  3. Ooh, I like Sarah’s idea of using brown sugar along with the parmesan. How about other cheeses like cheddar or havarti? Glad to know that they can be made in a shorter time span! Ever since I saw these on PW, I’ve been planning on making them for Super Bowl Sunday. I’m glad to hear that they were a hit with the guys. PW’s cream cheese stuffed jalapenos wrapped in bacon turned out to be a big hit when I made them for company. Would love other ideas for the big football game.
