Linguine with Mushrooms & Ham

I’m on this kick where I want to try some healthier recipes. So many of our friends, family, and friends and family of friends (!) are having health issues, particularly associated with heart complications. It’s very sad and dispiriting to hear of these things, so it makes me want to ensure Ben and I are staying healthy. Since I’m the one who decides what’s for dinner each night, I would feel totally responsible if anything happened to Ben’s (our) health.

Although deep down I know I can not completely own that (genes and exercise are factors beyond my control) I do want to take the responsibility to feed our bodies the nourishment they need to stay in tip-top shape! So, I took a few minutes the other day and searched MyRecipes and AllRecipes to find a few healthier recipes to start off with. By no means are we dieting – we love our sweets – this is just my obsession for now…at least for this week! 🙂

The recipes you’ll find in the next few posts may not be the healthiest you’ve seen, but they’re more nutritious and a lot lighter that we’re used to on a regular basis. And, they stay within our grocery shopping budget. Better yet!

We loved this first dish I made last night. I found this one on AllRecipes by Cindy. We actually just ate the leftovers tonight for dinner. It heated up very well on the stove after adding just about a tablespoon more of the cream. You might think “heavy whipping cream and ham?….healthy!?” Ha! It is to us! It’s all relative. 🙂

Linguine with Mushrooms & Ham (AllRecipes)

Original recipe yield: 4 servings.

* 1 (8 ounce) package linguine pasta
* 1 tablespoon butter
* 1 onion, finely chopped
* 3 cloves garlic, minced
* 1 cup sliced fresh mushrooms
* 1 1/2 cups whipping cream
* 1/4 pound cooked ham, julienned
* 1 teaspoon fresh basil leaves, chopped
* freshly ground black pepper


1. Bring a large pot of lightly salted water to a boil. Add linguine pasta, and cook for 8 to 10 minutes, or until al dente; drain.
2. Melt butter in a saute pan over medium heat. Cook and stir onion, garlic, and mushrooms in butter until tender. Reduce heat, and slowly stir in cream. Continue cooking until sauce has thickened, add ham and basil, and simmer for 10 more minutes.
3. In a large bowl, toss linguine with cream sauce, and season with freshly ground black pepper.

    This sounds delicious…

    I worry about my health too. I hate eating food that’s preserved with chemicals, but I end up doing it anyway. Ugh!
